Ingredients of Stuffed Peppers

  1. It's 2 of Bell peppers.
  2. You need 1 lb of Ground beef.
  3. You need 1/2 cup of Quinoa.
  4. It's 1 cup of Shredded sharp cheddar cheese.
  5. You need 1 tbsp of Olive oil.
  6. Prepare 1/2 can of Black beans.

Stuffed Peppers instructions

  1. Preheat oven to 375.
  2. Cut peppers in half, clean out seeds.
  3. Lay on cookie sheet and brush inside and outside with olive oil.
  4. Bake until tender.
  5. Brown ground beef. Season with salt and pepper to taste.
  6. Mix cooked quinoa into ground beef along with black beans.
  7. Scoop mixture evenly into peppers.
  8. Top with cheese.
  9. Bake until cheese is melted.
